Daily Gromit
Gromit likes to supervise kitchen adventures. Here he is overseeing some soup.
Rosemary Cauliflower Soup
Soften 1/2 large or 1 small onion and 3 cloves garlic, roughly chopped, in 2 tablespoons olive oil
Add 1 head cauliflower, roughly chopped, and 32 oz. vegetable or chicken broth
Add 1 sprig fresh rosemary
Pop a lid on the pan and simmer for 15 minutes until cauliflower is soft
Remove rosemary (it’s fine to have a few leaves left in the pot)
Blend until smooth (I used an immersion blender)
Add 1/2 cup grated Parmesan and blend again
Add cracked pepper and salt to taste (I used low-sodium broth and didn’t want to add any more salt)
